This is a carrot cake with cream cheese frosting. This was made for a Christmas party for a friend of my husbands who is in the service. He flew a helicopter in Afghanistan, hence the fondant helicopter on top. In an effort to not go overboard on the Christmasness of the cake, I opted for red and blue fondant pine trees to round out the patriotic feel of the cake.
